- Step 1. In a large bowl, whisk together the 190 g flour, 25 g sugar, 12 g baking powder, and 3 g salt.
- Step 2. In another bowl, whisk together the 300 g milk, 1 egg, 30 g melted butter, and 5 g vanilla.
- Step 3. Pour the wet ingredients into the dry ingredients.
- Step 4. Stir just until combined. A few small lumps are fine. Do not overmix.
- Step 5. Let the batter rest for 5 minutes.
- Step 6. Heat a lightly greased skillet or griddle over medium heat.
- Step 7. Pour about 60 ml / ¼ cup batter for each pancake.
- Step 8. Cook for about 2–3 minutes, until bubbles form on the surface and the edges begin to look set.
- Step 9. Flip and cook for another 1–2 minutes, until golden brown.
- Step 10. Serve warm with butter, maple syrup, fruit, or other toppings.
