Cheesy Garlic Breadsticks
Soft pizza-style breadsticks topped with garlic butter, mozzarella, and parmesan.
Ingredients
Ingredients scaled. The method below still refers to the original quantities.
Instructions
- Step 1. Mix the flour, yeast, sugar, and salt.
- Step 2. Add the warm water and olive oil and knead 6 to 8 minutes.
- Step 3. Cover and rise 45 minutes.
- Step 4. Heat the oven to 220 C / 425 F.
- Step 5. Press the dough into a greased or parchment-lined 9 x 13 inch pan.
- Step 6. Mix the melted butter with the garlic powder and brush over the dough.
- Step 7. Top with the mozzarella and parmesan.
- Step 8. Bake 15 to 18 minutes, until golden and bubbly. Slice into 12 breadsticks.
Notes
- Slice after baking, not before. Cutting the dough first lets the cheese run into the gaps and weld the sticks together.
- Garlic powder rather than fresh garlic here. Fresh burns under a hot grill of melting cheese.

Equipment
- 9 x 13 inch pan
- Pastry brush
- Pizza wheel
Substitutions
- Mozzarella
- A mix of mozzarella and provolone melts especially well. Cheddar works but browns faster.
- Garlic butter
- Add dried oregano, chilli flakes or a spoonful of grated parmesan to the butter before brushing.
Storage
Storing: Best warm. Refrigerate for up to 3 days and reheat in a hot oven rather than the microwave.
Frequently Asked Questions
Why did my breadsticks turn out doughy?
Usually a pan-pressed dough that was too thick, or an oven that was not fully at 220 C / 425 F. Press the dough right to the corners so it bakes in an even layer, and give the oven time to come up to temperature.
Can I make the dough ahead?
Yes. After mixing, refrigerate the covered bowl overnight — the slow rise improves the flavour. Bring it back to room temperature before pressing into the pan.
Why is the cheese sliding off when I cut them?
Cut after baking, not before, and let them sit two minutes first. Cutting the raw dough lets melted cheese run into the gaps and fuse the sticks together.
Can I use fresh garlic instead of garlic powder?
Not directly. Fresh garlic burns under a hot grill of melting cheese. If you want fresh, cook it gently in the butter first, then brush that butter on.
What do you serve with cheesy breadsticks?
Warm marinara for dipping is the obvious one. They also work alongside soup, pasta or a salad.
Did you make this?
Let other people know how it went. One tap, nothing to fill in.
