Substitutions

Honey
Maple syrup or molasses. Molasses gives a much darker, stronger loaf.
Milk
Water works and gives a slightly less tender crumb.

Can I use quick oats instead of rolled oats?

Rolled oats are better — they stay as visible flakes through the bake. Quick oats disappear into the crumb, which is fine texturally but you lose the character.

Why is my oat bread dense?

Oats absorb a lot of liquid and add no gluten, so the dough needs a proper rise. Judge by size rather than the clock, and do not add extra flour if it feels sticky.

Should I soak the oats first?

With very thick old-fashioned oats, yes — ten minutes in the recipe liquid softens them so they do not draw moisture out of the dough. Standard rolled oats do not need it.

Why did the oats on top burn?

They toast faster than the crust browns. If they are colouring too fast, tent the loaf loosely with foil for the last ten minutes.

Can I make this without honey?

Maple syrup or brown sugar in the same weight. Honey gives the characteristic flavour but the loaf works without it.
