Instructions
- Step 1. Preheat the oven to 220 C / 425 F. Line a large rimmed baking sheet with parchment paper if desired.
- Step 2. Place the halved potatoes in a large bowl.
- Step 3. Add the olive oil, garlic, oregano, dried parsley, thyme, salt, and black pepper.
- Step 4. Toss until the potatoes are evenly coated.
- Step 5. Spread the potatoes cut-side down in a single layer on the baking sheet.
- Step 6. Roast for 20 minutes without stirring.
- Step 7. Flip or stir the potatoes, then roast for another 12-18 minutes, until deeply golden and tender.
- Step 8. Sprinkle with fresh parsley and serve hot.

- Cut-side down and do not stir for the first 20 minutes. That undisturbed contact with the hot pan is what creates the golden crust.
- Give them space. A crowded pan traps steam and the potatoes soften instead of browning.
