Bakery-Style Chocolate Chip Muffins

- Step 1. Heat the oven to 220 C / 425 F. Line a 12-cup muffin pan.
- Step 2. Whisk the flour, sugar, baking powder, and salt in a large bowl.
- Step 3. In another bowl, whisk the eggs, milk, yogurt, oil, and vanilla until smooth.
- Step 4. Add the wet ingredients to the dry ingredients and fold just until almost combined.
- Step 5. Fold in 150 g of the chocolate chips. Do not overmix.
- Step 6. Divide the batter evenly among the muffin cups and sprinkle the remaining chocolate chips over the tops.
- Step 7. Bake for 5 minutes at 220 C / 425 F, then reduce the oven to 190 C / 375 F without opening the door.
- Step 8. Continue baking for 13 to 16 minutes, until golden and a toothpick comes out with a few moist crumbs.
- Step 9. Cool in the pan for 5 minutes, then transfer to a rack.
Notes
- The short burst of high heat at the beginning helps create taller bakery-style muffin tops.
