- Step 3. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes, until browned and cooked to 74 C / 165 F. Transfer to a plate.
- Step 4. Reduce the heat to medium. Melt the butter in the skillet, add the garlic, and cook for 30 seconds.
- Step 5. Pour in the chicken broth and cream. Simmer gently for 2-3 minutes.
- Step 6. Reduce the heat to low and stir in the Parmesan until the sauce is smooth.
- Step 7. Add the pasta and chicken back to the skillet and toss to coat.
- Step 8. Add a splash of reserved pasta water if needed to loosen the sauce, then serve.
