Crispy Oven-Baked Chicken Tenders
Crunchy Parmesan-panko chicken tenders, baked not fried.

- Step 1. Heat the oven to 220 C / 425 F. Place a wire rack on a sheet pan and lightly oil the rack.
- Step 2. Pat the chicken dry. Season lightly with a pinch of the salt.
- Step 3. Place the flour in one shallow bowl. Beat the eggs in a second bowl. In a third bowl, combine the panko, Parmesan, paprika, garlic powder, onion powder, remaining salt, and pepper.
- Step 4. Coat each chicken tender in flour, then egg, then the panko mixture, pressing gently so the coating sticks.
- Step 5. Arrange the tenders on the rack with space between them. Lightly drizzle or spray with olive oil.
- Step 6. Bake for 16 to 20 minutes, turning once halfway through, until crisp and the chicken reaches 74 C / 165 F.
- Step 7. Serve immediately with your favorite dipping sauce.
Notes
- A wire rack allows hot air to circulate around the tenders, helping both sides stay crisp.
