Honey Blueberry Muffins
Honey-sweetened blueberry muffins made in two bowls, no mixer.
Ingredients
Ingredients scaled. The method below still refers to the original quantities.
Instructions
- Step 1. Preheat the oven to 190°C / 375°F. Line a 12-cup muffin pan.
- Step 2. In a large bowl, whisk together the 250 g flour, 10 g baking powder, and 3 g salt.
- Step 3. In another bowl, whisk together the 135 g honey, 120 g milk, 85 g melted butter, 2 eggs, and 5 g vanilla.
- Step 4. Pour the wet mixture into the dry ingredients. Stir just until combined. Do not overmix.
- Step 5. Gently fold in the 150 g blueberries.
- Step 6. Divide the batter evenly between 12 muffin cups, filling each about ¾ full.
- Step 7. Bake for 18–22 minutes, until the tops are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Step 8. Let them cool in the pan for about 5 minutes, then transfer to a rack.
Notes
- Stir only until the flour disappears. Overmixing is what makes muffins tough and tunnelled rather than tender.
- Toss the blueberries in a spoonful of the measured flour before folding them in and they will not all sink to the bottom.
- A skewer should come out clean or with a few moist crumbs — honey keeps these moist, so slight underbaking is more forgiving than overbaking.

Ingredient Notes
- Honey
- Sweetens and adds moisture, and it makes the muffins brown faster than sugar would. If the tops are colouring too quickly, tent them loosely with foil for the last few minutes.
- Blueberries
- Fresh or frozen both work. Do not thaw frozen ones — they bleed into the batter and turn it grey. Fold them in straight from the freezer.
- Melted butter
- Cool it slightly before it meets the eggs, or it can start to cook them.
Equipment
- 12-cup muffin pan
- Paper muffin liners
Substitutions
- Honey
- Maple syrup works in the same weight for a different flavour. Granulated sugar also works — use 150 g and add 30 g extra milk to make up the liquid.
- Blueberries
- Raspberries, blackberries or chopped strawberries all work. Wetter fruit benefits from an extra spoonful of flour in the batter.
- Milk
- Buttermilk gives a slight tang and a softer crumb. Any plant milk works in the same quantity.
Storage & Freezing
Storing: Keep in an airtight container at room temperature for up to 3 days. A paper towel in the container absorbs condensation and stops the tops going sticky.
Freezing: Freeze for up to 3 months. Thaw at room temperature or warm for about 20 seconds in the microwave.
Frequently Asked Questions
Can I use frozen blueberries in muffins?
Yes, and they work well — but do not thaw them first. Frozen berries folded in straight from the bag stay intact; thawed ones bleed and turn the batter grey.
Why do my blueberries sink to the bottom?
Toss them in a tablespoon of the measured flour before folding them in. The coating gives them grip. A thicker batter also holds them better than a thin one.
Can I substitute honey for sugar in muffins?
This recipe is already built around honey. Going the other way, use 150 g of granulated sugar and add about 30 g extra milk, since honey contributes liquid as well as sweetness.
Why are my muffins tough?
Overmixing. Stir only until the dry streaks disappear — lumps are fine. Continued stirring develops gluten and gives a chewy, tunnelled muffin.
Why did the tops brown too fast?
Honey browns more quickly than sugar. If they are colouring before the middles are set, tent the pan loosely with foil for the last five minutes.
